This is one of those fool-proof easy summer salads that can stand alone as a delicious side dish or with the addition of grilled chicken or steak, can make for a hearty meal. Another advantage of this yummy dish, is that it tastes great served hot, at room temperature or chilled. And it’s a good way to incorporate all those overflowing summer garden veggies!

2 zucchini
1 yellow squash
4 green onions

Arrange in a shallow dish and pour 3 tablespoons of the vinaigrette over the tops and mix to coat evenly. Let marinate 30-45 minutes. Cut green onions into small dice and halve the tomatoes. Place into large serving bowl and set aside.
Heat grill, then proceed with grilling the zucchini and squash until cooked through. Chop into 1/2 pieces. Then add the grilled vegetables and the couscous to the large serving bowl with the tomatoes and onions. Pour desired amount of vinaigrette over everything and stir to combine.
